HORIZON ON EARTH: A NEW WAY TO EXPERIENCE GASTRONOMY
In a world where every action counts toward preserving our planet, the restaurant industry has a key role to play. Aware of our environmental impact, we’ve decided to take action with an ambitious project: Horizon On Earth.
This project is much more than an ecological initiative; it is a true philosophy that guides our choices, our relationships, and the way we cook. Here’s how we’re transforming the culinary experience into a sustainable commitment.
♻️ Reducing Waste
No more single-use plastic!
We’ve replaced 90% of our plastic with compostable alternatives. Additionally, cutlery and wine glasses can be kept upon request to minimize waste. Every little action counts, and our guests are invited to play an active role.
💧 Smart Resource Management
We’ve implemented a filtered water system, energy-efficient equipment, and responsible practices to reduce our energy consumption.
And because every ingredient deserves to be put to good use, we also utilize less-commonly used parts of food by creatively transforming them through fermentation, koji, miso, and more…
🥕 Support for the Local Economy
80% of our ingredients come from local or neighboring producers.
We believe that culinary richness comes as much from local sourcing as from diversity: our dishes showcase regional products while exploring flavors from around the world.
🌱 Commitment to sustainability
Our project is also built on close collaboration with dedicated farmers who share our values of responsible agriculture and respect for future generations.

Our menu evolves throughout the year. We grow our own herbs and aromatic flowers, depending on the season and what nature provides. Nothing is set in stone; everything transforms, just like the earth itself.
